Fresh Veggie Turkey Ragu

Quick 20 minute meal – 5 minute prep – makes 4 servings

  • 1% lean ground turkey
  • 2 garlic cloves – minced
  • 1 bag of baby spinach
  • 1 jar of your favorite tomato sauce (I use Rao’s tomato/ basil)
  • 1 large sweet onion chopped
  • 1 package of whole wheat spaghetti
  • Salt, pepper and thyme to taste

Cook pasta according to directions, Drain and save 1 cup of the liquid

  • Put 1 Tbsp of olive oil in a large skillet- Saute’ the minced garlic until it softens( about 1 min)
  • Throw in the onions and sauce’ until they get soft
  • Season with salt, pepper and thyme
  • Put the ground turkey meat in the pan and break it up with a spoon into small pieces and stir everything together
  • Once the turkey is cooked( about 5-6 minutes) stir in 1/2 to 3/4 of the jar of your favorite tomatoes sauce
  • Mix together
  • While it is simmering, throw in the baby spinach until it wilts.
  • Pour the mixture over the drained pasta in a large bowl. Pour the pasta water over the mixture and mix together
  • Can add salt and pepper to taste
  • Can top with fresh parmesan
